I do fritters. Sorry, not a precise recipe, just a method. Grate courgettes into a bowl. Some grated carrot as well is nice. Add salt & pepper, a big spoonful of flour, and a beaten egg yolk. I do it a bit at time to make sure I have a batter consistency. If necessary, add a little milk to the mixture, it should be thick dropping consistency. Fry until crisy in vegetable oil.
