I made a lovely tasting tart/quiche last week which went down even with my niece and nephew who are only 8 and 4.

Puff Pastry (I was lazy and used ready rolled)
3 Courgettes
250g Ricotta
3 Eggs
50g Parmesan (I didn't weigh mine, just put loads in
50g Pine Nuts
1 tsp Nutmeg

Toast the nuts in a dry frying pan and set aside. Fry the courgettes in a little olive oil and salt and pepper in batches until slightly golden and set aside.

Mix together half the pine nuts, half the nutmeg the ricotta, half the parmesan and the eggs.

Lay the pastry on a lightly floured baking sheet and spread the ricotta mix on top leaving about 3 or 4cm all the way round then arrange the courgettes on top and push them into the mix. Pull up the sides of the pastry to keep mixture in and then sprinkle the remaining nutmeg, parmesan and pine nuts on top and bake in an oven at 200c for around 30-40 mins or until nice and golden.

It's delicious and will be making it again!
