I wonder if it's worth looking into pressing them for juice and then pasturising the liquid in bottles?
It's what the locals do in Normandy, although I can't give you any details.
Maybe next year when you've had time to research and buy a small,simple press?
Where are you Paddy? If it's in one of the areas of apple orchards, there may be a farmer with a press who may do all that for you, and you'll pay about £1 a litre for your own pasturised apple juice.
