Braised Red Cabbage

This is a lovely recipe and the reason why I grow red cabbages!

1 Red Cabbage
2 Medium Onions
2 Cooking Apples
3 tablespoons Red Wine Vinegar
2 tablespoons Brown Sugar
Freshly Grated Nutmeg
Salt & Pepper
Garlic - 1 clove chopped

This is my really easy Christmas Cake recipe.

8oz Self Raising Flour
8oz Soft Brown Sugar
8oz Butter
6 Eggs
A good teaspoon Mixed Spice
16oz Sultanas
10oz Currants
12oz Raisins
4oz Mixed Peel
5oz Glace Cherries

Put the sultanas, currants and raisins in a large bowl and sift some of the flour over them. Mix the fruit up so that each piece is coated in flour and pick off any stalks that you see. Add the mixed...

Lemon Meringue Pie

Shortcrust Pastry (enough to line a pie dish)

2oz Butter
2 Lemons
4oz Sugar
3 level Dessertspoons Cornflour
3 Large Egg Yolks
Half a Pint of Water

Meringue
3 Egg Whites
2oz Sugar

Line a pie dish with shortcrust pastry and bake blind.
Blend the cornflour with the water, cook it gently until thickened.
