This is what I do. Periodically I mix a cup of vinegar in a about three litres of water and give my pepper plants a drink. The purpose is to lower the pH, since peppers cannot take up nutrients if the pH is hight (above about 6.5). This is local treatment for adjusting pH by trial and error, and I suspect it doesn't alter the pH permanently.
This is easy to run controls, simply by only giving a few plants the vinegar treatment, and observign the difference compared to the untreated peppers.
My peppers are always stupendlous., both the hot and the sweet.
