Default planting my seedlings in the vegetable patch

Hi there!
I have been growing some vegetable seedlings and am wondering about planting in the patch. I live in Spain and here the gardeners make rows maybe 20cm - 30cm high and water the plants by flooding the furrows in between. Is there a purpose for these high rows other than flood watering? Does this force the plants roots to go deeper or make them grow better or do they grow the same if the plants are planted in the soil in flat rows. I have some soaker tube with all the little holes and wonder if I can just plant my seedlings in a flat garden bed with no raised rows and just put the pipe beside the plants and water them like that or is it better to plant in the tall rows and put the pipe on top of the row next to the plants?

usually the furrows are so they can water at one point and irrigate the whole plot in your case i would make small furrows along side the seedlings and then use the hose the gutters will help to maintain a moist atmosphere after the water is turned off
