Now is the ideal time to go forth and make yourself a batch of Nettle Pesto (recipe on my blog). I've made a batch with some to freeze in ice cube trays. Problem is it's so good I think it'll be gone quite soon. Need to find more nettles!

.....and a recipe for nettle soup. Second year of making.
1 lb potatoes 4 oz nettle tops 2 oz butter 1 pint hot veg or chicken stock sea salt and black pepper Boil the chopped potatoes for ten mins, drain. Melt the butter, add the washed and chopped nettles and cook for 3 - 4 mins. Add the potatoes and the stock, bring to the boil and simmer for 10 mins. Lastly add the seasoning and cool and blend until smooth. Add a swirl of sour cream to serve. Delicious. |

Thanks for the recipe, I remember eating nettles (boiled) on a survival weekend and didnt mind them at all. Nettle soup sounds great so i think ill give it a go on the weekend. Cheers for the recipe!
