flowering herbs

I've just noticed some tiny flowers on my thyme and corriander. I'd like to save the seeds when they're big enough but I'm not sure how to go about it.

Hiya when they go to seed cut the stalks off and put them up side down in a paper bag in a warm dry place if they are outside they will be polinated.
