Smile Lavender

I have a lovely lavender plant / bush in one of my raised beds which has so many flower heads.

I cut a handful down and have bunched it up to dry so I can make some lavender bags later in the year.

I was also going to make a lavender cake today! What do you guys do with your lavender?

Lesley no.... we have just tasted the cake and it was absolutely disgusting! We can't eat it and it will have to be thrown away!

I don't quite know what happened! It looks really nice, but it's gross!

NO!! What a total shame - your cake looks fabulous!!

I have just read that English lavender tastes like soap, is primarily used for soaps and perfumes and that lavender comes from the latin word lavare, which means to wash. Did your beautiful looking cake taste soapy??

Aww.... Hollie how devastating that it doesn't tast good because it looks lovely.

Unfortunately I don't like lavender, even the smell of it but if I saw that cake in a cafe I would have had to have a slice.

Haha. Yeah lavender isn't the best to put in cakes, however, the couple of flowers on top for decoration are nice.
Best thing to do is dry it out, and put it in bags are you are doing, and use it for fresheners and such

What I did was make a lavender reduction by slowly simmering the flowers in water and a very small amount of sugar. I think I over cooked the lavender reduction, maybe too high a heat.

It didn't taste soapy, more bitter. I think I just over did the lavender bit! I will stick to regular victoria sponges I think! hee hee!

the cake looks amazing it must of been bad to be thrown away, something that looks that good.

There was a Lavender cake in a Spirit and Destiny magazine. Shamefully I don't think I have that magazine any more. But I am going to have a look to make sure. There are plenty of recipes on the internet.

Yeah, I am thinking now it may have been the eggs I used or something! I don't think it was the addition of lavender that made it taste bad!

I made a little posie of lavender and jasmine and took it up to my Nan (who lives in residential care, missing a garden of her own) and she was thrilled!

Sorting through my olive and good food magazines as they are taking over the spare room - I came across Lavender Sugar.

Mix 2tsp of lavender flowers with 1kg of caster sugar and divide into cellophane bags or little Kilner jars.

There is a picture of them in the jars with a little bow and a label on them and they look very pretty.

Your lavender looks nice, the cake looks pretty good too. Why does the cake taste smells bad? Maybe you should go online to see formula to adjust the proportion of ingredients.
