I used to use red cabbage as a Ph tester when I was doing chemistry experiments as a kid. It certainly works.

I never put the cabbage juice onto paper, you can use the solution of cabbage juice on its own and the colour of the solution will change depending on the ph.

The most time consuming part is working out which colours equate to which Ph values. You need some solutions with a known Ph value to work this out. Of stuff you find in the kitchen, baking powder is very alkaline (Ph 8), lemon juice is very acidic (Ph 2.5). Use those to create your markers. I'm sure you can find Ph values of other substance on the net.
