Default Raised beds... when plants are well established.

Hi you all,

I decided to adopt the raised bed method (not so popular in Italy, no one I know has it) because I think it's better to grow vegs.

However, I already have well established plants and that's the problem.
Should I just remove the plants (like for example the Curry Plant, Mint, Lemon mint, Tarragon...) and plant them again or maybe try to cut the soil in big pieces to raise the level of the soil? I'm so insecure on this...
