Pickle or freeze
Hi Gerallt,
I have got an old picklling recipe from my mum for sweet and sour pickling.
She used it mainly for cucumbers, but, according to her, anything can be pickled that way.
For 5 kg cucumber (okay maybe you need less for your spring onions)
2ltr water
1.5 kg sugar
0.75 ltr vinegar (any white vinegar will do)
2 handfulls of salt
pickling spices tied up in an old cotton clothes
for cucmbers add 500g of onions
Trim the little bulbs, but leave whole, Bring all the ingredients to the boil and pour over onions in a plastic bowl. Leave it for 2 days and there you are ready.
For cucmbers, peel and slice lengthways. Scoop out the pulp and slice into 1/2" half moon pieces.
But do you know, that you can also freeze the spring onions. I tried that last year. I sliced them up and used them through the winter as and when needed. They seem to keep fine.
