Smile Strawberry Jam

I made some strawberry jam on Sunday it's lovely

I've never made it before and it couldn't be simpler.

Ingredients:
Juice of 3 lemons
1.8kg small strawberries (tops off)
1.84kg jam sugar (not preserving sugar)

Put a saucer in the freezer. Put all the ingredients in a bowl and gently stir. Cover with a tea towel and sit over night. This helps keeps the fruit whole, (however I didn't do it as I wanted to make it on Sunday and hadn't read the recipe in advance) then put in a pan on a low heat until the sugar has disolved then boil for 4 mins. Take off the heat and put a spoonfull on the saucer, leave to cool for a few seconds then pull your finger through it and if there is a skin it's ready. If not reboil for 2 mins and keep doing this until there is a skin then pour into hot sterile jars. Easy!

Yes, just made some, too.
I always get jam sugar 3:1 from the continent for strawberry jam. Then you only need 0.5kg of sugar for 1.5kg of fruit. I think you can taste the fruit better. Never come across this suage in Britain though.

Hi Shetty, that does sound better as jam is so sweet, healthier too.

(my wine yeast arrived yesterday for my rhubarb wine so will hopefully get it made this weekend)

I think you can get jam sugar in supermarkets now. Not sure if it is exactly the same but there are two types-
preserving sugar
jam sugar (with added pectin)

I'll be making strawberry jam tonight!

Me too i will make strawberry jam it's better than the supermarket one. You can preserve it as much as you want. it's easy to make delicious jam with any fruit, i like the ingredients that Lisa4star gave, you can add some flavors to your jam!
