Default Lemons??

Any suggestions for preserving, using or storing lemons? We currently have sooooooooo many.

Have you tried lemon curd? Or Lemon Marmalade?

I really like lemonaide, too... the recipe for that is

6 lemons large, squeezed
1 cup sugar
6 cups water.

Take the 1 cup of sugar, dissolve it 1 cup of water over a slow heat stirring regularly. Add the lemon juice, then the rest of the water.

Utterly unhealthy... really nice though

Yep we have tried loads of lemonade and also tried lemoncello which was great. Not keen on curd or marmalade either unfortunately.

What about old fashioned style lemonade? Its only short term of course but well worth the effort!

here we keep the lemons by cleaning the lemon and uses some salt on it.This way it can be used to make lemon rice but this is only for small quantity.I suggest to you for lemon pickels

Freeze them in slices for use with G&T in Summer - works for me! Although limes are better for G&T

Default Morroccan Style Preserved Lemons

How about Morroccan Style Preserved Lemons?

12 lemons quartered but still joined at the bottom
250g coarse sea salt
8 black peppercorns
3 star anise
3 bay leaves

Pack a little salt into each lemon and squash wedge them into a large sterilised jar, layering with salt, bay leaves, peppercorns and star anise. Push down the lemons so that the juice covers the lemons.Give the jar a turn every few days to redistribute the salt and leave for 4-6 weeks.

Will keep for ages and is great with fish
