Default apple recipes

Has anyone got any suggestions for using a bumber crop of cooking apples? I don't know the variety. It's a huge old tree - much too high to pick the fruit, even from a ladder, so I have to wait until they fall so they won't store. I have already had over 200lbs of fruit from it this year and there's a lot still on it. I'm giving bags of apples away to everyone I meet but ....................

Paddy, I think you had better have a big apple wine making session, or put up a For Sale sign up outside your house. Thats a lot of apples to shift.

I wonder if it's worth looking into pressing them for juice and then pasturising the liquid in bottles?
It's what the locals do in Normandy, although I can't give you any details.
Maybe next year when you've had time to research and buy a small,simple press?

Where are you Paddy? If it's in one of the areas of apple orchards, there may be a farmer with a press who may do all that for you, and you'll pay about £1 a litre for your own pasturised apple juice.

I think the problem with apples is that you suddenly have loads which arn't fit for storage and you need to know what to do with them in less than a week, and unless you have a freezer or loads of jars and camdem tablets ( or a gut of steel!!!) then you need to know what to do with those which would otherwise go to waste. That's why I thought of juicing them for use over the next 12 months.

I love rhubarb and apple crumble, however dont think I could eat enough crumbles in one week to get rid of the apples! lol
