Lightbulb Yummy Courgette :)

I picked my first (yellow) courgette of the season last night.

Last year I was running out of ideas to do different things with my masses of courgettes but I tried something new and simple last night and it was so yummy:

Ribbon the courgette with a potato peeler or mandolin then make a dressing with lemon juice, olive oil, garlic, chillie, salt and pepper and toss in the courgette.

Be sure to make it last minute though otherwise all the water will come out of the courgette.

This is definitely one to try - much nicer than I thought it would be and will be making it again, over and over.

Great job Lisa. That does sound like a very good salad. I'll have to try it, with a diced tom added in (I love toms). Have you ever tried slicing the courgettes into circles, dipping them into a mixture of beaten egg and milk, and then into fine cracker crumbs that have been seasoned with pepper, salt, and a little garlic powder? You then place them on a cookie sheet and bake at 400 F for 12 min. turn them over and bake for 10 more minutes. I use to fry them but this is something a bit healthier that I came up with as an experiment. Oh peel the courgettes first.

Hi Guys,
Thanks for the 2 recipes, they both sound delicious
However, 1 thing lacking in my garden Cougettes
Will have to try with "Shop Bought" for now.
On the "List" for next seasons seeds,

That recipe sounds lovely and since I am on a health kick, it's perfect

I have deep fried baton shaped courgette before after dipping them in flour seasoned with salt, pepper and smoked paprika, that was also lovely but not quite so healthy.

Lesley - I will def post the salad recipe on the recipe page as it is one worth trying.

I posted a bit more detailed recipe in the food section. Hope I remembered everything. Tonight I'm doing a pork loin roast I've had in the slow cooker, creamed cabbage, and greenbean with onions. Ahh, veggies from the garden, and I do love to cook, mostly just from my head, what my Mom calls "experiments" lol.
