Hi Whorlicks, cauliflowers do that - they just don't stand in the ground well. As soon as they look really good enough to eat then you need to harvest them even if you have to put them in the freezer. Folding one of the outer leaves over the cauliflower head helps protect it from the rain and you must always water around the base of the plant - not over the curds / head.
