Default pepper problems

Hi everyone, I'm new to the forum and would like some advise if possible about my peppers!
I'm not a novice gardener but have only just started growing veg this year, the problem is my pepper plant it is a Bell Pepper, and although the plant is lovely and heathy with lots of flowers and peppers at various stages of growth I picked one today as it seemed to have reached it's max size, it was green, looked lovely and shiney and when I cut it in two it looked normal and smelt like a pepper BUT tasted absolutely vile I had to spit it out! I was really dissapointed LOL!
I just wonder what has gone wrong, have I picked it too soon? do I have to wait till they have turned red ?
Can anyone shed any light on this Many Thanks

Oh just a thought it is planted up in a trough with a chilli (cayenne) this is also very heathy growing strongly with lots if flowers and quite a few chillis already, just incase this has anything to do with it!

Hi Snow Baby. I think you may have picked the pepper a bit early. They get sweeter as they turn red. Suggest you leave them a bit longer.

Pepper need to be quite big for them to be very tasty. Just let them grow the flesh will be thicker and nice to eat. You probably found that the flesh was quite thin and it just means they aren't ready yet.
