Default Sprouts

Hello All
Why do all the pictures of sprout stalks in the ground have no bottom leaves.
Are you supposed to remove them or what.
Ive looked in several books and websites and it doesnt mention doing this.

The lower leaves eventually go yellow and fall off, naturally. To make the photos look good, they tidy up the plant before taking the photo.

So there is no benefit from leaving them on or cutting them off

I remove them just because they go yellow and they still will take nutrition from the plant - by removing them the plant can concentrate on the sprouts or greens.
