Default A Wartime Recipe

For Leslie as requested

SCRAMBLED ONIONS
2 Onions
1 teacup Breadcrumbs
1/2 cup Milk
1 oz Cheese
Salt and Pepper
4 rounds of Toast
Chopped Parsley

Parboil the onions and chop finely.
Place the breadcrumbs, onions and milk in a saucepan to boil. Add the grated cheese and seasoning.
Pile in heaps on toast and garnish with chopped parsley.

(According to Central London Electricity Ltd "Cheerful Rationing card, June 1944" - This makes a useful supper dish. Try with leeks when they are in season)

Thanks Primrose! I love reading old recipes. They were certainly inventive with rations during the war but I can't see Les (my OH) eating it!!
