FLORA’S FAMOUS COURGETTE CAKE

This will make two 8” layer cakes. Line cake tins with baking parchment.

Cake:
180g golden raisins 750g courgettes
6 large eggs 375 ml vegetable oil
450g caster sugar 675g self-raising flour
¾ tsp bicarbonate of soda ¾ tsp baking powder

Soak raisins. Wipe courgettes and grate without peeling. Sieve to remove excess water. Cream oil and sugar and add eggs one at a time. Add flour, bicarbonate, baking powder and beat. Stir in the courgette & raisins. Pour the mixture into two sandwich tins and bake Gas mark 4, C180˚, F350˚ for 30 minutes.

Filling: Lime curd: Makes 350 ml jar
75g unsalted butter 3 large eggs
75g caster sugar 125ml lime juice (approx. 4)
Zest of limes

Melt the butter in heavy-based saucepan, add all other ingredients & whisk to a custard over gentle heat. Let cool before filling jar, or cake. Keep in the fridge.

Icing: for one cake:
200g cream cheese 100g icing sugar
Juice of 1 lime zest of l lime to decorate
2-3 tbsp chopped pistachio nuts, optional.

Beat the cheese until smooth; add the sugar, then the lime juice to taste.

Courgette and pine nut quiche


Ingredients
half a 680g pack frozen shortcrust pastry, thawed
1 onion, finely chopped
4tbsp olive oil
2 courgettes, thinly sliced
3 large eggs
142ml double cream
75g Gruyère, grated
100ml full-fat milk
50g pine nuts, toasted

Method
1 Preheat the oven to 200C/Gas 6. Roll out the pastry and line a 23cm flan tin. Cover with greaseproof paper and fill with baking beans. Bake blind in the oven for 10 minutes. Remove the paper and beans and bake for a further 5 minutes. Turn the oven down to 150C/Gas 2.

2 Meanwhile, fry the onion in the olive oil for 10 minutes, until softened. Remove with a slotted spoon and set aside. Fry the courgettes in the same pan for 5 minutes, until lightly coloured. Season to taste. Remove with a slotted spoon, add to the onions and stir to combine.

3 Mix together the eggs, cream, cheese and milk, and season to taste. Spoon the onion and courgettes into the pastry case, pour in the egg mixture and sprinkle the pine nuts over the top. Bake for 30 to 40 minutes, until set and golden. Serve hot or cold.

How about Brie and Courgette Soup?

2lb courgettes - chopped
12oz potatoes - chopped quite small
1 onion - chopped
2 pints veg stock
8oz Brie minus the rind - chopped into bits
Salt and pepper

Soften onion and potatoes in a pan over low heat for a few minutes.
Add the courgette and cook for further minute or two.
Add the stock and seasoning, bring to the boil, turn the heat down and simmer for 15 minutes.
Remove from heat add the brie and let it melt in.
Leave to cool a little.
Liquidise and check the seasoning.
Eat!!!!

I've also tried this with half fat brie...... it's not the same!!!

I've just posted a fab stuffed courgette flower recipe on my blog: The Mind's Ramblings of a Food Flunky.


Others have also submitted other Courgette Recipes, Mushroom Recipes and there's also a cracking Mixed Berry (Strawberry & Raspberry) Jam recipe.

Hi Tom and welcome!

You have the makings of a really great blog there - I love your writing!

I have never made jam that way before. I always cook the fruit until it is the right consistancy that I want then add the sugar off the heat, stir until it is properly dissolved and then boil rapidly to set. A tip to help any jam set that is made with low pectin fruit is to use part gooseberries (you can't taste them) or a bramley apple. No need for jam sugar then.

My favourite is absurdly simple ,

slice courgette length ways

courgette about half thick cm thick

on to lightly oiled tray, sprinkle with olive oil grill for a few minutes turn sprinkle with parmesan and blackpepper, grill untill bubbling golden.



spicy veg parcels

1 pack filo pastry squares
makes 4 parcels
oven 180
lighty oiled /floured tray

peel,dice a medium potatoe, boil 5mins add some courgette diced about an thumbs length boil for a couple of min drain

back into pot add about same volume of light cream cheese,philedelphia,st moret,creme fraiche

stir add tsp paprika or chilli powder



filo sheet on tray

dollop mixture on to centre of sheet, pull up sides pinch together

bake until golden, approx 10 mins

make a little salad, serve


cool veg parcels

re:-courgettes
2lbs sliced courgettes
1 onion-diced
4 mushrooms-diced4 tomatoes-chopped
4 rashers of bacon -chopped up into half inch pieces
4-6 cloves of garlic-squashed
tomatoe puree
sunfower oil
8oz mature cheddar cheese-grated
put SOME SUNFLOWER OIL INTO A PAN ON THE HOB,ADD THE DICED ONION AND HALF THE GARLIC AND SWEAT FOR ABOUT 5 MIN
ADD ALL THE OTHER INGREDIENTS(not the cheese) AND SIMMER FOR A further 10-15 mins-keep mixing up
add all of this into an ovenproof dish,cover with grated cheese and put in oven(180 deg fan oven preheated)for 20 mins
serve with hot garlic bread
i make about 5 meals at a trime like this,but only put the cheese on the one to eat then.the rest i split into separate containers and freeze
when req ,defrost,cover with cheese and then bake for 20 mins again at 180deg beautiful

I do fritters. Sorry, not a precise recipe, just a method. Grate courgettes into a bowl. Some grated carrot as well is nice. Add salt & pepper, a big spoonful of flour, and a beaten egg yolk. I do it a bit at time to make sure I have a batter consistency. If necessary, add a little milk to the mixture, it should be thick dropping consistency. Fry until crisy in vegetable oil.

I made a lovely tasting tart/quiche last week which went down even with my niece and nephew who are only 8 and 4.

Puff Pastry (I was lazy and used ready rolled)
3 Courgettes
250g Ricotta
3 Eggs
50g Parmesan (I didn't weigh mine, just put loads in
50g Pine Nuts
1 tsp Nutmeg

Toast the nuts in a dry frying pan and set aside. Fry the courgettes in a little olive oil and salt and pepper in batches until slightly golden and set aside.

Mix together half the pine nuts, half the nutmeg the ricotta, half the parmesan and the eggs.

Lay the pastry on a lightly floured baking sheet and spread the ricotta mix on top leaving about 3 or 4cm all the way round then arrange the courgettes on top and push them into the mix. Pull up the sides of the pastry to keep mixture in and then sprinkle the remaining nutmeg, parmesan and pine nuts on top and bake in an oven at 200c for around 30-40 mins or until nice and golden.

It's delicious and will be making it again!

Have you tried any chutneys or jam with them?

I have made three different courgette chutney recipes-
spiced courgette chutney
apple and courgette chutney
courgette glutney

They all turned out brill, really tasty and make good presents and should keep for christmas presents to!

I've also made courgette and ginger jam which again was really good. Took alot of boiling to get the pectin to set it but tastes good! More like a marmalade.

Also the courgette cake recipe makes really nice muffins. I've added nuts and seeds with dried fruits to make really nice breakfast muffins. They tend to stay moister for longer to.

Which chutney do you recommend and could you please post the recipe as that sounds a good way to use them up and last year at christmas I made a few food hampers which went down really well but was very time consuming making everything the week leading upto christmas. This year I have already made jams to go in the hampers (trying to be prepared this year).

I'd probably recommend the spiced courgette chutney, especially if you are doing christmas hampers.

hi i made this a few weeks ago and it was a grate and easy cake to make

Courgette Cake
250g butter, broken up into pieces (at room temperature)
250g (1 cup) caster sugar or brown sugar
4 eggs
350g (3 cups) self raising flour
juice and zest of 1 an orange
1 tsp cinnamon
1/2 tsp mixed spice
350g (3 cups) courgette (zucchini), grated
50g (1/2 cup) walnuts, roughly chopped
80g (1/2 cup) sultanas

Orange Cream Cheese Icing
125g cream cheese
50g unsalted butter
300g icing sugar
juice and zest of 1/4 orange
Method
Courgette Cake: Grease and line a 25cm deep cake tin with baking paper. Preheat an oven to 180°C.
Place the butter and sugar in a bowl and beat until creamy. Add the eggs one at a time while mixing until the eggs are well incorporated.
Sieve the flour with the cinnamon and mixed spice. Fold in a 1/3 of the flour, followed by 1/2 of the orange juice and zest, repeat this using the remaining flour and orange, so that all the ingredients are well combined.
Stir in the courgette, walnuts and sultanas and incorporate well.
Pour the mixture into the prepared cake tin and place on the centre shelf of the preheated oven. Leave the cake to cook for around 1 hour or until the cake is firm to touch (if preparing 2x20cm cake tins, reduce the cooking time to 30-40 minutes). Turn the cake out on a rack and allow to cool.
Orange Cream Cheese Icing: Beat the cream cheese and butter together until creamy. Gradually beat in the icing sugar and orange juice and zest until you have a smooth creamy icing. Spread over the cooled cake. If you have prepared 2x20cm cakes, spread the icing over the top of the one and sandwich the two cakes together and then cover the top and sides of the cake.

Thanks mugins! I tried your recipe (before I registered, i was looking for some courgette recipes..), and it is really nice! When I started preparing for making this cake I wasn't thinking that it would be really easy to prepare. But it is

Another recipe that I found and I want to share with you (if you like Courgette, and if you're reading this thread, you probably do), and this recipe is for Tagliatelle with Courgette (shortened). It is very healthy (and vegetarian), so you don't have to worry too much about the calories.
It is also very tasteful too.

Pick them when they are very small (less than 3"), boil them whole until just soft, and then deep fry in Tempura batter = Zuchini (Yummy!!!)
