Default Courgette Recipes Wanted!!

Does anyone have any tried and tested, tasty recipes which use courgettes please?

Lots Eleanor,

for use in salads, just pick them young and slice with a potato peeler to give very thin strips. Gorgeous just seasoned with sald and pepper and a bit of vinagrette dressing.

Raw?? That's different - I've never eaten them raw before. Thanks Endeavour I will try that. Any other suggestions?

Got a lovely recipe using cream and chilies - dosen't sound too promising I know!

I made this with courgettes, but any summer squash should work. Creme fraise (sp?) can be used instead of cream. Adjust the chillies to taste, the cream makes the flavour quite mild to my mind.

1/2 marrow, about 450g/1lb
30ml/2tbsp veg oil
10ml/2tsp cumin seeds
1 small fresh red chilli, seeded and finely chopped
30ml/2tbsp water
50g/2oz young spinach leaves
90ml/6tbsp single cream
salt & pepper

De-seed and cut the marrow up into bite size pieces. Put the oil in a pan, when hot toss in the cumin and the chilli, be careful it may spit! After one miniute add the marow pieces and water, cover and simmer for about 8 mins, stirring occasionally until the marrow is just cooked and tender. Remove cover and cook for a further two mins or until most of the liquid has evaporated. Wash the spinach and tear into rough pieces throw it into the pan to wilt, stir in the cream and cook over a high heat for two minutes. Add salt and pepper to taste.

Serve with rice as a veggie main course with plain or spiced rice!

Also works very well as a side dish for non-veggies!

I put this on another forum a while ago - so you may have seen it elsewhere, still a good dish though! Probably not for those on a diet however!

chocolate courgette cake

The courgette melts into the mixture, giving the cake a wonderfully moist texture".

200g/7oz plain flour
1tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
110g/4oz caster sugar
2 size-2 eggs
6floz vegetable oil
170g/6oz good quality plain chocolate
225g/8oz firm courgettes, peeled weight
55g/2oz finely chopped walnuts

Grease n flour two 8in sandwich tins. Sift all the dry ingredients into a bowl. Beat eggs with the oil.
Melt chocolate over a pan of simmering water.
Grate courgettes. Beat eggs and oil intot eh dry ingredients, then stir in the chocolate and courgettes, and nuts.
Divide between the 2 pans and bake in a preheated oven 180c/350f/gas 4 for 25-30 mins. Cake should be well risen and a skewer should come out clean.
Cool for 5 mins in tins, and turn onto rack to cool completely.
Sandwich with whipped cream and dust top with icing sugar!
(actually raspberries or strawberries and cream would be great!)
Eat and enjoy!

Hi Elenor

Doid you watch Saturday Kitchen today? They were doing favourites from the latsets series, and an Italian chef was on doing saltimbocca and a kind of tomato and courgette bake thing to go with it. Check it out in the archives. Looked nice, and I'm not into courgettes at all. I always think they should be heavier than they are when you pick them up.

I got the ingredients today to try it so I'll post with a verdict later in in the week.

Don't really like courgettes to be honest But courgettes and chocolate?? Yuk!

Chocolate courgette cake is lovely, if you give it to people without telling them about courgettes then they eat it quite happily, afterall carrot cake is a great favourite
What about chocolate beetroot cake, now that really is something!

You guys are pregnant or something! OK, I will concede that I do like carrot cake, and yes, I might not know if there were courgettes in a chocolate cake - I mean, if the chocolate is rich enough you could disguise festering, dead rats in there, but beetroots - urgh!!!

I lived in Russia for a few months, and in the canteen they used to slap a spoon of grated, pickled beetroot across the mashed potato - it put me off for life!

It's not the colour - pickled cabbage - bring it on, but beetroot...that was certainly brought by people from outer-space.

I have a rather spiffing recipe for caremalised-cockrocah cake, if you're interested. It's rather, er, 'crunchy'.

Chris, beetroot is gorgeous! Freshly cooked, sliced, between two slices of buttered bread, with lashings of salt and pepper - fabulous!!!

Hi have you tried that courgette and ham scone recipe yet?

I am desperate for courgette recipes today its the chocolate and courgette cake! I already have 3 LARGE bags frozen for winter use, dont think the freezer can take much more!

Hi Cookie, thanks for the offer, I`m not sure really! Liked the sound of those scones though, the ones with the ham. Which have you tried that you are impressed with?

We had for lunch yesterday courgette soup courtesy of Nigella Lawson and then the chocolate courgette cake, which unfortunately I forgot to add the sugar to oops ha ha ha !!! Tastes great though!

Sandra with your sugarless courgette cake you could serve it warm with a hot chocolate fudge sauce and a scoop of vanilla ice cream. Lovely!!!

Courgette And Ham Scones

1 courgette
50g. wafer thin ham
225g self raising flour
50g. margarine
1/2 teaspoon dried oregano
1 medium egg
milk

Beat the egg and make it up to 100ml with the milk. Grate the courgette and chop the ham.
Season the flour with salt & pepper, rub in the margarine, stir in the oregano, ham and courgette.
Stir in the egg and milk keeping a little back to brush the tops.
Mix to a soft dough and kneed on a floured surface. Roll out to 1 inch thick and cut into 2 1/2 inch rounds. Brush the tops with the egg mixture.
Bake for 10 minutes at 200C, 400F, Gas 6.
It says lovely with soup.

They sound wonderful thanks ever so cookie. I will be making them tomorrow ! YUM YUM. Thank god courgettes arent fattening! Although the suggestion to add sauce to my sugarless cake sounds tooooooo good not to try!
