Default pasty recipe straight from a cornish book

straight from cornish recipe book one recipe for pasties,

for the pastry,

1lb flour
5oz lard
pinch of salt
water to mix

for filling

1lb best quality lean beef (my oh uses shin)
1lb pottatoes
1lb swede
1 small onion (optional)
1oz butter
pepper and salt to taste.

the leaner and better quality the meat and the finer the veg is cut the better the and tastier the pasty.

now how to do it

set oven to 400f or gas 6. make pastry and divide into 4 equal pieces (make them bigger or smaller as you want) roll each piece into rounds 7" in daimeter. cut up spuds into small irregular shapes plus the swede and onion. dice beef into cubes approx 1/4" removing all fat. on each round of pastry put a share of the vegatables and add salt and pepper to taste. add the meat, a knob of butter and another sprinkle of pepper. dampen the edges of the pastry and fold up from the side with floured hands. pinch the edges together and crimp firmly to seal. cook on floured tray for 3/4 hour. less if you make smaller or more if larger. this recipe is usually good for 4 pasties.

now sit back and enjoy me ansomes. cheers now.
