Default Tomato sauce(italian)

First of all put one tablespoon of olive oil in a large frying pan,heat gently,add two crushed garlic cloves,dont let it brown it will spoil it,let it simmer for a few minutes and then remove the garlic as you only want aslight taste of garlic,grate one onion very fine into the oil,and do the same with a carrot,stir it all together to make a mulch.you then need to skin your tomatoes(drop in boiling water a few minutes).You then need a moule(hope thats the right spelling),put the tomatoes in the moule and strain the tomato juice into the
mulch stirring as you add more tomato juice.when you nearly filled your pan let it simmer,add a couple of bay leaves,mixed herbs,black pepper.keep stirring every few minutes,the juice will gradually simmer down until you reach the thickness of sauce you require.let it cool and put it into tubs and put it in the freezer till required.you can use this sauce on a wide range of things.I like to cook chicken breast in tin foil in the oven with a small amount of oil,when nearly cooked i add the sauce and leave in the oven another five to ten minutes,very nice with new potatoes,french climbing beans and spinach.

Wonderful! My mouth is watering at this one!

All I need know is some sun so that the tomatoes ripen.......

Sounds great. Have been growing plum toms specifically for this purpose. Now all I need is for them to ripen too!

Will make a note of the recipe for next year - all my toms lost to blight this year, but at least we are not under water
