Thumbs up Potatoe Salad made with my very own freshly harvested Maris Peers

I have just harvested and feasted on the first load of Maris Peers I planted in March.

Below is the recipe for a gourgeous potato salad for any of you doing the same and looking for a yummy accompaniment to enjoy with a barbeque!

Easy potato salad

However many potatoes you feel appropriate (depending on the size of your family)
Generous handful of home grown parsley
2 tbsp White Wine Vinegar
2 tbsp Olive oil
Salt and Pepper to taste

Boil potatoes for 15 minutes or until tender.
Mix all other ingredietns in a bowl, wait for potatoes to cool down and stir in.
Cover bowl in cling film and leave in fridge for an hour.
Eat and enjoy!
