Delicious courgette salad!

This is soo..... YUM!

Ribbon the courgette with a potato peeler or mandolin then make a dressing with lemon juice, olive oil, garlic, chillie, salt and pepper and toss in the courgette.

Be sure to make it last minute though otherwise all the water will come out of the courgette.

This is definitely one to try - much nicer than I thought it would be and will be making it again, over and over.
