I am trying to cut down on desserts as I am on a bit of a health kick but I have a very sweet tooth so I have come up with this dessert:
Put some rhubarb in a pan along with about 1tbsp of honey and let it soften for 15-20 minutes then fold into some Greek yoghurt. Simple but delicious (and pretty healthy). |

I'm not a huge crumble fan - hate out it sticks in your teeth, lol. A cobbler is good though. Strawberry and rhubarb, mmm...
I'm supposed to be being healthy, so hard when there is an abundance of food growing outside and you have a sweet tooth like moi. |

One way to cut down on the amount of sugar and calories is to use several leaves of the traditional sweet cicely, as demonstrated in this recipe for rhubarb batter pudding. batter_pudding

The recipe at the top of the page is healthy and I would say is suitable for a baby.
There is another recipe I have made 'rhubarb fool' - I thinks it's from the good food website and it's also healthy and really delicious. Went down well with my friends and I prefer it to crumble. If a recipe says to add sugar you could substitute it for honey as it is a healthier option and kids love honey. I gave my niece a bit of honeycomb when she was little and she loved it - strip them down first though, it's very messy, lol. |
