Default Gherkins!

I've got 4 plants on the go - was hoping to get preserving with the results, buuuuuuuuuuuuut the plants haven't really taken off as planned (they're only about a foot tall now) but they've got fruits growing!

In the absence of enough to really get pickling, how else can one eat gherkins?

I am eating mine in salads and they are very good too! First time that I have grown them and they seem to be a month ahead of cucumbers grown in the same conditions.
