Hi all, i got a food processor for Christmas and was wondering has anyone any recipies for Carrot cake please

Yes, here is a recipe for a low fat, low sugar carrot cake, and you do not even need a food processor to make it. carrot_cake

Hi Tezmac. This is a recipe my Gram made, and it's pretty good. We use a cream cheese frosting on top.
3 eggs
1 1/2 cup veg. oil
2 tsp cinnamon
1 tsp baking soda
1 1/2 flaked coconut
1 c chopped nuts (I use English walnuts)
2 c sugar
2c flour
1tsp salt
2 tsp vanilla extract
2 c shredded carrots
1 small can crushed pineapple with juice

Beat together eggs and sugar, add oil, mix well. Sift together flour, cinnamon, salt, and baking soda. Add to egg mixture and mix well. Add remaining ingredients and mix well. Pour into 9"x13" pan that has been sprayed with cooking spray or greased. Bake at 350* for 50-60 min.

I have just collect the recipe of Carrot cake for my coming birthday. This rich and moist spice cake, full of grated carrot and toasted nuts, has great flavor. I was ate it in my friend home. I liked it so much and in my next birthday, I want to make it.

i'm trying to track down the recipe my gran had, didn't have milk or eggs it was a proper war time cake it was seriously good and vegan

Applesauce is a very healthy substitute.You want to use half as much as the recipe calls for oil.In your recipe you would only need 1/4 cup applesauce.
