Default beetroot ideas?

Hi anyone got any interesting things to do with beetroot? Ashamedly it's shop bought beetroot farm shop though not supermarket because my OH hates beetroot so I haven't been brave enough to suggest we grow it.

Anyway I bought a big bunch at the weekend cos I love it, wrapped 4 large ones in foil and roasted them, had one in a salad tonight which was gorgeous, made a beef, beetroot and (an amazing) creamy cheese dressing sandwhich with some lovely french cheese from the farm shop that turns to goo as it warms up, but that's for work tomorrow. Have put the other two in the fridge and will need to use them in the next few days but don't know what to do with it

grateful for any ideas

Here we use to mix with sugar and boil it so this should become like sweet however we eat only on occassions but beetroot is good for human heart blood.

It is one of the best detoxifying things to drink when you have extracted the juice using a juicer, particularly when drunk with tomato juice.

I've bitten the bullet and planted some - two little rows in my raised bed. I'll try the beetroot juice idea when and if I get a harvest, I forgot about what it does to your pee though, I panicked and thought I must have had a kidney infection or something!

I even heard of a cake or muffin recipe that used beetroot! I looked up all these sneaky ways of getting veggies in when my toddler was being a fussy boy!

Hi Nicola

Well I'm looking forward to harvesting the Beetroot, I too am the only one in my family who enjoys it!

You could try grating it a passing it off as red carrot!
Make a betroot cake (same as a carrot cake, and OH will never know)
Or you could have another lovely sandwhich with one of them and throw the other at your OH ; - )

Oh you can't beat a cheese n beet sandwich!... Mmmm... Thick slices...With a dash of Mayo...(spot the person hungry and waiting for the oven buzzer to sound!)

I grew some beetroot last year and pickled it but it was too strong (nearly blew hubby's head off!)..............anyways having another go this year, however does anyone have a sweet beetroot pickle recipie?
