This is the ideal time to get the barbie out and get cooking! Please feel free to share your favourite recipes!

Default Dexterdog's Pork, apricot and ginger burgers

Ingredients:

1 chopped onion
500g pork mince
fresh grated ginger (its up to you how much, depends how much you like it)
chopped dried apricots (see ginger above)
chopped fresh parsley (see above)

Fry the onions gently in a little oil, until soft, not browned. Put the mince into a bowl, add the cooled onions and ginger.
Mix well. Add the apricots and parsley and mix gently.

Shape mixture into burgers (wet your hands with cold water then the mixture wont stick to your hands). Place in the fridge for 30 minutes.

Cook on the barbie or cook in the oven for around 10 minutes a side at 180C.

Serve with couscous and a carton of greek yoghurt mixed with the juice of half a lemon and some chopped parsley.

Delish! This recipe was given to me by my god-daughter! Its one of the best ones I've tasted!!

Default Best ever coleslaw!

This is so easy - Honestly!

2 carrots, peeled and grated
1/2 small cabbage, grated or sliced thinly
1 small onion, peeled and sliced thinly
mayonnaise
double cream
seasoning

Mix all the vegetables in a large bowl and add mayo until you have a nice consistency. Ad a couple of spoonfuls of double cream and season to taste!

Yum yum!

Barbecue Potatoes

Ingredients: 2 tbsp. butter or margarine, melted
1 tbsp. chili powder
1 tbsp. honey
1/4 tsp. garlic powder
1/4 tsp. ground pepper
2 lb. red potatoes, quartered

Directions: In large bowl, combine chili powder, honey, garlic powder, pepper and butter. Add potatoes; toss to coat.

Conventional Oven:
Spoon potatoes in greased 11x7-inch baking dish. Bake 40-50 minutes in a preheated 400?F oven until potatoes are tender.

Barbecue Grill:
Wrap and seal potatoes in foil; place on grill for about 30 minutes or until tender.
Barbecue Potatoes !!
