Thumbs up Leek and Potato Soup.

I've made tomato soup and I've made vegetable soup... for years but I have never made leek and potato for some reason. Until today that is!!!!! Oh my goodness, it was delicious!!!
The recipe, if anyone wants a go is:

4 large leeks sliced finely
2 medium potatoes, diced
1 medium onion, chopped small
2oz butter (yes it is quite a lot but does make a difference to the taste)
1 and a half pints (850ml) stock
10fl oz (275ml) milk
salt and pepper

Melt the butter and gently sweat all the veg over a very low heat with the saucepan lid on for about 20 minutes.

Add the stock and milk and very gently cook for another 20 minutes. Be careful not to let it get too hot or the milk will boil over the top.

Liquidise and serve with or without a spoonful of cream swirled on the top.

BTW, I think it was so much better as all the veg were mine!!!

Thanks 2 plots, I made it tonight, but I didn't quite put all the butter, trying to watch the figure, if I don't no-one else will. It was as delicious as you said, served with hot crusty bread. Yummy!

Hi

I make an easy leek and potato.

I finely slice a couple of large leeks.

Peel and finely grate (the smallest size grater you've got) four medium sized potatoes - that thickens the soup as it disintegrates as it cooks.

Then I use 3 pints of water and three Knorr chicken stock cubes - what a cheat!

Simmer it for about 30 minutes.

It's absolutely delicious even though I say so myself.

Lovely with some crusty bread and butter.

I m glad I found this recipe. I was just about to go to make dinner ( wife is out) and was thinking what to make of potatoes. I think my son, daughter and me will be enjoying this food tonight. I am going to cook this..

Default Radish Leaf Soup

Had a go at this yesterday, pretty much the same recipe as above but using radish leaves instead of leeks and a little creme fraiche instead of milk.

tasted not too bad although needed a bit of salt and pepper
