Spicy Pork, Prawn, and Chicken Salad
Yam Sam Sahai(Thai name)

Ingredients

1 1/2 cups slices of steamed pork
1 1/2 cups slices of steamed chicken
1 1/2 cups slices of steamed prawn
(In each case, the slices should be cut
on a diagonal to the grain of the meat.)
3 tbsp. roasted chili paste (nam phrik phao)
3 tbsp. fish sauce
1 tsp. sugar
2 - 3 tbsp. tamarind juice
1/4 cup lime juice
1/4 cup roasted cashew nuts or peanuts, broken into chunks
1 lettuce plant
1/2 head cabbage, chopped
1 carrot, chopped

Preparation

- Make the sauce by mixing the roasted chilli paste, fish sauce, sugar, and tamarind juice in a pot and heating to a boil.
Allow to boil a few moments ; then, remove from the heat, add the lime juice, and stir.
- When the sauce has cooled, add the pork, chicken, and prawn ; stir to mix thoroughly.
Scoop onto a platter, sprinkle with peanuts or cashews and serve with lettuce, carrot and cabbage.
