Default Minted Peas?

How do you make minted peas? The last time I tried I threw a spring of fresh mint into the pan with the peas. The whole house smelt of mint but the peas tasted like normal boring peas!! So what did I do wrong?

Hmm. Well, if you're gonna do it properly then you have to marinate them overnight. As a quick solution chuck the mint in at the end of the cooking. It's like cooking with cheese, it always goes in at the very end of the process. Learnt from a very earnest chef in Crete.

I cheat! Stir half a teaspoon of mint sauce and a small amount of butter into the cooked peas - works a treat!

Hate garden pease but love minted overcooked mushy peas.

Chop them up very finely then allow to marinate overnight.
